1 Butternut Squash, peeled, seeded and cubed
4 Garlic cloves, diced
1 Onion, chopped
1 Can Chicken stock
1 C Cream, more or less depending on how thin you like it
Olive oil (EVOO)
Dash of freshly ground Nutmeg
Salt and Pepper

Saute the garlic, onion and squash in olive oil. Add the chicken stock and simmer until the squash is tender. Process in blender until smooth. Return to the pot and add seasonings and cream.

You can split the squash, gut it and micro it for 5 or 6 minutes and then scoop out the insides for a quicker prep time, but I like the flavor of the sautéed and simmered squash. Do be careful trying to peel the darn thing. They are tough!
