4 C diced zucchini
1/2 C chopped celery
1 C diced carrots
1 diced onion
2-3 cloves garlic, diced
1/2 C Butter
1 Can Cream of Mushroom Soup
1 Can chicken broth
2 C Cream
Salt and pepper
1/2 C Sour Cream, optional

Directions:
Directions:
Melt the butter in a large saucepan and saute veggies until tender, about 20 min. Add the chicken broth and soup and puree in batches. Return to the pan and add the cream, and sour cream if desired.

Don't peel the zucchini. The dark green adds color and looks almost like broccoli soup.
