4 Large Eggs, hard-boiled
1 Large Avocado, slightly soft
3 TBSP Onion, finely minced
3 TBSP Celery, finely minced
3 TBSP fresh basil, minced
salt and pepper, to taste
1/4 cup Mayonnaise -- DO NOT SUBSTITUTE (May need up to 1/3 cup)

Coarsely chop the hard-boiled eggs. Cut the avocado into eighths lengthwise and then slice crosswise into 1/4" slices. Combine eggs and avocado, and add remaining ingredients. Salt and pepper to taste. Mix well.Yields 2 1/2 cups.

Fresh basil is key to this delicious summer egg salad. Top a lettuce and spinach mix with chopped smoked turkey and a scoop of this and you won't even need salad dressing!
