Mix together in a large bowl:

2 – 6 oz. cans of tuna, drained
2 Tbsp. capers
2 Tbsp. lemon zest
1 bunch of green onions
1/2 cup black olives, pitted

Dressing:

Lemon juice from one lemon
2 Tbsp. anchovy paste
Good olive oil; approx. 1/2 cup – whisk into lemon juice and anchovy paste to make a vinaigrette.

Add to tuna mixture and mix well.

In hollowed out 4” rolls (or one large Italian loaf); brush inside with olive oil…

Put layer of sliced tomatoes & soft lettuce
Drizzle with olive oil and some salt to taste
Put on all of the tuna & dressing mixture
Layer of fresh basil & fresh mint
Layer of tomatoes
Drizzle of olive oil and some salt
Top of roll (or loaf)

Press down firmly and wrap in aluminum foil and allow to sit for 2 hours before serving.

Start these 2 hours before serving; finished sandwich needs to sit for 2 hours in the refrigerator weighted down with a can or something heavy.
