8 Whole Anaheim chiles, charred, peeled and seeded OR
2 (7 oz) cans whole green chiles, drained, rinsed and patted dry
8 oz. Monterey Jack or Queso Quesadilla Cheese, cut into 8 sticks
3 eggs
1 Jalapeņo, seeded and diced
1/4 cup all-purpose flour
1/2 teas. salt
3/4 cup milk
1 cup grated Cheddar Cheese

Directions:
Preheat oven to 350 degrees. Oil a 9 x 13 baking dish. Stuff each chile with a Monterey Jack cheese stick and place in baking dish. In a bowl, beat together eggs, jalapeņo, flour, salt and milk; pour over chiles. Sprinkle cheddar cheese over top. Bake about 35 minutes or until golden brown. Let cool 10 minutes before serving. Makes 4 to 6 servings.
