6 eggs at room temperature, beaten
2 cups of a combination of grated Gruyere, Parmesan, cheddar, or other flavorful cheeses
2 cups cream, warmed
1/2 teaspoon kosher salt
2 cups chopped spinach, frozen or fresh sautéed
1/8 teaspoon cayenne pepper

Directions:
Directions:
Preheat oven to 325º. Combine eggs, cream, salt, and cayenne pepper, and beat for one minute until well blended. Squeeze fluid out of spinach. Stir in spinach and cheese. Place in a greased baking dish. Bake for 30 - 40 minutes or until almost firm and lightly browned on top. Serve warm.

I prepared this delicious egg dish many times in a casserole dish without a crust, as a breakfast dish for my Sunday School class. It is delicious.
