1/4 cup butter
1/3 cup minced onion
1 1/2 cups long grain rice
3 1/2 cups Swanson chicken broth
1/4 teaspoon kosher salt
1/8 teaspoon ground saffron
1/8 teaspoon ground pepper
1/2 cup grated Gruyere or Parmesan cheese

Directions:
Directions:
Saute onion in butter until golden. Stir in raw rice until butter is absorbed. Preheat oven to 350º. Stir in broth and spices. Place in greased 2.5 quart casserole dish and bake covered for 30 minutes. Remove from oven and stir in cheese. Allow to sit, covered for 5 minutes. Stir and serve.
