1 cup buttermilk
1 teaspoon Baking Soda
1/2 cup butter
1/2 cup shortening
2 cups sugar
5 eggs
1 teaspoon vanilla extract
1 cup flaked coconut
1/2 cup chopped pecans
1 teaspoon baking powder
2 cups flour

Frosting:
8 ounces Cream Cheese
1/2 cup butter
1 teaspoon vanilla
4 cups confectioners sugar
2 tablespoons cream
1/2 cup chopped nuts
1 cup coconut
Directions:
Directions:
Preheat oven to 350º. Grease 3 nine inch cake pans or one 9X13" sheet pan. In a small bowl dissolve the baking soda in the buttermilk.
In a large bowl, cream together 1/2 cup butter, shortening and white sugar until light and fluffy. Mix in the eggs, buttermilk mixture, 1 teaspoon vanilla, 1 cup coconut, 1/2 cup pecans, baking powder and flour. Stir until combined and pour into prepared pans.
Bake for 30 - 35 minutes or until a toothpick inserted in center comes out clean.
To make frosting, combine cream cheese, butter, 1 teaspoon vanilla and powdered sugar. Beat until light and fluffy. Mix in a small amount of the cream to get desired consistency. Add nuts and coconut. Spread between layers or frost the top of the sheet cake.
