5 Tablespoons Bacon Grease (Or Oil)
1 Teaspoon Sugar
3/4 Cup Scalded Milk
1 Pack Active Dry Yeast
2 Beaten Eggs
1 Teaspoon Salt
1 Teaspoon Lemon Juice
1/4 Teaspoon Baking Soda
3 Cups Sifted Flour
6 Tablespoons Sugar

in a sauce pot, mix the BACON GREASE and 1 Teaspoon of SUGAR. Add in the MILK and heat over a low heat until the MILK is scalded, then remove from the heat and allow to cool down.

When the MILK has cooled to the touch, add in the YEAST and allow to sit until the YEAST is bubbly.

Now, place the Mixture into a large bowl and add in the Beaten EGGS, SALT, LEMON JUICE, BAKING SODA and 6 Tablespoons of SUGAR. Stir this well and then begin mixing in the FLOUR, one Cup at a time, beating the Mixture until smooth between each addition. Continue until all the FLOUR is mixed in and the DOUGH is smooth.

Cover the bowl with a damp towel and allow to rise in a warm draft-free area until double in size.

After the DOUGH has doubled in size, knead the DOUGH a bit, then wrap the DOUGH and place in the refrigerator over night.

Grease the Muffin Cups and fill them half full of DOUGH. Allow to rise until double in size, then bake in a preheated 375°F oven for about 15 minutes, or until golden brown.

This is one of Mom's recipes for Yeast Rolls that are made in a Muffin Pan or Cup. The Dough for this one uses Yeast and is also refrigerated over night, so be ready to plan in advance if you want to try this one.
