1 1/3 cup oil
2 cups sugar
4 eggs
2 cups ap flour, sifted
3 cups grated carrots
2 t baking soda
1 t salt
2 t cinnamon
dash nutmeg
1 cup raisins

Icing
8 oz cream cheese
1 stick butter
1 box 4x sugar
1/2 cup chopped pecans
2 t lemon juice
2 t vanilla

Directions:

Blend sugar and oil - add eggs one at a time
Add sifted flour and spices - fold in carrots

Pour into greased pan 9x12 or two 8' round pans

bake at 350º for 45 minutes

Icing
blend all ingredients and frost cooled cake

My friend Lynn from FDLE made this cake for us quite often. the recipe is easy, the hardest part is grading the carrots!
