1/2 lb asparagus or green beans
1/2 cup flat leaf parsley
2 T extra virgin olive oil
1 T fresh lemon juice
1 t Dijon mustard
1/2 c mayo

Directions:
Directions:
blanch veggies for 1 minute ( cook in water)
Immediately put in ice to stop cooking

wash and dry parsley and put in blender
puree with oil, lemon juice and mustard until smooth

stir puree into mayo and season with salt and pepper
