2-14 oz blackeyed peas
1/2 c chopped onion
1 green pepper, minced
1/2 c chopped fresh parsley
2 cloves of garlic minced
1/2 c olive oil
2/3 c cidar vinegar
1/2 t crushed red pepper
1 1/2 t salt
2 t sugar
2 t jalapeno chopped fine

drain peas, rinse with cook water
Place in bowl and add all other ingredients
Mix well and refrigerate overnight
