1/4 c butter
2 T vegetable oil
1 large onion
2 cloves garlic
3 lbs yellow squash thinly sliced
31/2 - 4 cups chicken broth
1 c half and half
11/2 t salt
1/2 tsp white pepper
chopped fresh parsley

Directions:
Directions:
Combine butter and oil in large dutch oven. Add onion and garlic, sauté until tender. Stir in squash and chicken broth, cover and simmer 15-20 min until the squash is tender. Spoon 1/3 of squash mixture into blender and process until smooth. repeat remaining mixture.
Return squash to pot stir in half and half, salt and pepper. cook over low heat stirring constantly until well heated.
Garnish with parsley and serve.
