1 lb crabmeat picked free of shells
1/3 cup crushed Ritz crackers
3 green onions, white and green portion, finely chopped
1/2 cup finely chopped green pepper
1/4 cup mayo
1 egg
1 t Worcestershire sauce
1 t dry mustard
1/2 lemon, juiced
1/4 t garlic powder
1 t salt
dash cayenne pepper
four, for dusting
1/2 cup peanut oil

Directions:

in a large bowl, mix together all ingredients, except for the flour and oil. Shape into patties, dust with flour

Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes in batches. cook 4-5 min until brown. Flip and repeat.

Serve with the crab sauce in the earlier portion of the cook book.
