12-13 lb. Green tomatoes
8 Onions
10 Bell Peppers
6 Hot Peppers
3 T. Salt
1 Qt. Vinegar
3 T Mustard
1 3/4 C. Sugar

Directions:
Directions:
Chop tomatoes, peppers and onions, add salt and let stand overnight. Drain. Add vinegar, sugar and mustard. Bring to a boil and simmer until tender, about 10 min. Pour into jars and seal. Makes 14 pints.

Chow Chow making was a McDonald-Criswell project in the fall before the freeze killed all the tomato plants, but unripe tomatoes remained.
