2 Lb. watermelon rind
2 C. Vinegar
2 C. Water
4 C. Sugar
1 Stick Cinnamon
1 t. whole cloves
1 t. whole Allspice
1 Lemon, sliced thin

Directions:
Directions:
Cut rind into pieces to fit into pint jar and 1/2 " thick, or may also cut into 1" cubes. Soak rind overnight in brine (1/4 C. salt to 1 Qt. water). Drain and rinse rind. Cook rind in fresh water until tender.
Combine all syrup ingredients and boil 5 minutes. Add rind a few pieces at a time and simmer until rind is clear. Pack into hot sterilized jars and cover with syrup. Seal and refrigerate. Makes 2 pints.
