1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
3 - 4 tbsp. grated lemon rind
1 c. sugar
1/2 c. nuts (optional)
1/3 c. oil
2 eggs, beaten
1/2 c. milk

Directions:
Directions:
Preheat oven to 350º F. Sift dry ingredients together. Add nuts and lemon rind. Beat eggs. Add oil and milk to eggs and add mixture to dry ingredients and mix together lightly. Bake in a paper-lined loaf tin, or in muffin cups for 30 to 45 minutes (depending on size of loaf). Remove from pan and pierce top lightly with a toothpick. Top with glaze while still hot.

Glaze: Juice of one lemon mixed with 1/4 c. sugar. Cool before serving.
