! Tblsp olive oil
1 small onion, chopped
1 clove garlic, minced
1/2 lb.ground pork shoulder, lean ground beef, or ground veal
1 pkg (10-oz) frozen spinach
1/2 cup finely chopped,cooked chicken.
1/8 tsp thyme leaves
1/8 tsp marjoram
1/8 tsp rosemary
1/8 tsp salt
dash pepper
1 egg
2 Tblsp fine dry breadcrumbs
2 Tblsp freshly grated Parmesan cheese

Directions:
Directions:
In a large frying pan, heat olive oil over medium-high heat; add onion and garlic. Saute until onion is limp, about 5 mins. Add pork,beef,or veal; cook, stirring until meat is crumbly and brown. Add spinach and cook, uncovered over med-high heat until spinach is thawed and liquid is evaporated. Remove from heat and stir in cooked chicken, spices,egg, breadcrumbs,and Parmesan cheese. Mix well and set aside (or cover and chill overnight allowing it to come to room temperature before using.
Use to fill ravioli noodles,sealing well.* (See recipe)
To cook: drop raviolis into boiling,salted water, stirring gently several times, for 8-10 minutes or until just tender and pasta is translucent clear through. Drain well.


*Fresh Pasta recipe:
2 1/3 cups all-purpose flour
1 cup semolina flour (or all-purpose if you don't have any)
1 tsp salt
1 Tblsp olive oil
4 eggs
2 Tblsp + water
Mix dry ingredients using a flat beater in a Kitchenaid mixer on low for about 30 seconds.
Whisk together the eggs and water,and slowly add to mixture until absorbed,at least 2 minutes.Mix by hand until smooth. Divide dough into 2 balls,wrap in plastic,and rest for 30 minutes. Use a pasta machine with gradually smaller settings to get smooth sheets.

These require lots and lots of work but I'll never forget eating these as a kid. Serve with your favorite meat sauce...the best in the world!
