1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped nuts (optional)
Additional confectioners' sugar

Directions:
Directions:
1. In a large bowl, cream butter and sugar until light and fluffy.
2. Beat in vanilla.
3. Combine dry ingredients; gradually add to creamed mixture. Stir in nuts (optional).
4. Cover and refrigerate for 1-2 hours.
5. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets.
6. Bake at 400° for 10-12 minutes.
7. Roll in confectioners' sugar while still warm. Coat completely. Roll cookies a second time if a thicker coating is desired.
