2 cups flour
1 tsp baking powder
1 tsp soda
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1/4 cup cocoa
1 cup chopped nuts
3 eggs
2 cups sugar
1/2 cup oil
1 tsp vanilla
3/4 cup buttermilk (or 1 TBS lemon juice in milk)
2 cups unpeeled. grated zucchini
1 tsp grated orange peel

Directions:
Directions:
Mix dry ingredients together in medium bowl. In large bowl beat eggs until light and fluffy, add sugar, slowly add oil and vanilla. Add the dry ingredients in 3 batches, alternating with the buttermilk. Fold in zucchini and orange peel, mixing well.
Pour mixture into a bundt pan or 2 loaf pans. Bake at 350º for 50-60 minutes or until toothpick inserted comes out clean. Remove from oven, let sit ten minutes then remove from pans. Cool thoroughly and sprinkle with powdered sugar

This is one of my very favorite recipes, it is so delicious and a great way to use zucchini in the late summer months. You can also shred zucchini and freeze it to use later in the year for zucchini bread.
