1 pkg. (1 lb.) frozen hash brown potatoes, thawed
12 large eggs
Sea salt and pepper
1 ½ cups sour cream
1 pkg. (4-5 oz.) soft goat cheese, room temperature
4 green onions, thinly sliced

Preheat oven to 375. Lightly grease a 9x2 ½ inch spring form pan.

Squeeze the moisture from the hash browns. Mix in a bowl with butter, 1 egg, 1 tsp. sea salt and ¼ tsp. pepper. Pat into bottom and up sides of prepared pan, using a moistened measuring cup. Place on a rimmed baking sheet and bake until set, 15-20 minutes.

In a large bowl, whisk sour cream, goat cheese, 1 ½ tsp. sea salt and ¼ tsp. pepper until well combined. Whisk in remaining 11 eggs. Pour into crust and sprinkle with green onions.

Bake until set, 45-50 minutes. It is done when you gently shake the pan and the filling very slightly jiggles in the middle but not on the sides. Unmold quiche and serve.
