3 cups chicken broth
1 cup whipping cream
4 Tbs. butter
1 cup quick-cooking grits

Bring broth, cream and butter to a simmer in a saucepan over medium heat. Gradually whisk in grits. Reduce heat to low, cover and cook until grits are creamy and tender, stirring occasionally, about 6 minutes. Serve with mushroom sauce.

Mushroom Sauce

1 cup chicken broth
1 cup beef broth
½ cup dry white wine
½ pound bacon
8 oz. shiitake mushrooms, stemmed and sliced (3 cups)
¾ cups whipping cream
1 Tbs. fresh sage leaves

Cook bacon in skillet. Remove and drain on paper towels. Crumble when cool. Add mushrooms to the same skillet and sauté until golden. Add 2 broths, wine and whipping cream to skillet and simmer until reduced to sauce consistency, about 5 minutes. Mix in bacon and sage. Season to taste with salt and pepper.
