2 (8") green zucchini
1 tbsp. vegetable oil
1 tbsp. small onion, chopped
1/4 tsp. salt
pepper to taste
1 large tomato, diced
1/2 c. grated American or cheddar cheese

Directions:
Directions:
Dice unpeeled zucchini into 1/2" cubes. Saute in oil for 5 minutes.
Add onion, sprinkle with salt & pepper.
Saute, uncovered, stirring gently.
Add tomato, cook for 3-4 minutes.
Sprinkle with cheese, cover. Remove from heat and let stand for about 5 minutes. DO NOT STIR; serve.
