Boneless, skinless Chicken Breast
One large can of Stewed Tomatoes
Lipton Onion Soup Mix
Water
Rice

Directions:
Directions:
1. Cut the chicken into strips and sprinkle with salt & pepper
2. Oil a large skillet and brown chicken
3. Remove chicken from skillet and place on plate with paper towel underneath
4. Wipe out skillet
5. Combine can of Stewed Tomatoes with the Liptons Soup packet and ¼ cup of water in the skillet (I usually like to cut up the tomatoes a little)
6. Add the chicken back in the skillet and simmer on medium for 20-30 minutes, until the sauce reduces and thickens and chicken is cooked through.
7. Make Rice
8. Serve the chicken and sauce over rice with a side of veggies and you are done!

This recipe is something my Dad used to make us when we were growing up, it’s a simple and really delicious weeknight dish and I make it for Andrew and Lizzie all the time!
