6 eggs- beaten
1 cup milk
2 tsp sugar
1 tsp salt
1 lb Monterey Jack cheese, cut into small cubes
6 oz cream cheese, cut into small cubes (easier to do if you put package in freezer for an hour or more before cutting into cubes)
16 oz (or more) cottage cheese (small curd is a little better but large ok too)
3/4 stick of butter, cut into small pieces or slivers (also easier if butter in freezer for an hour or more before chopping)
1 tsp baking powder
1/2 cup flour

Put beaten eggs, milk, sugar, salt in a smaller bowl and mix well. Put cubed Monterrey Jack, cream cheese, butter and cottage cheese in a large bowl and stir together. Add egg mixture to cheese and butter mixture. Stir baking powder and then flour into cheese etc mixture. Pour all into a lightly greased 9x13 inch baking dish. Bake at 375º for 35-40 minutes, until top of contents is light golden brown. Let sit at room temp for at least 30 minutes before serving.

Excellent for brunch--our traditional Christmas breakfast. DO NOT double recipe- if you want more than 1, make 2 separate batches. This is the full fat recipe, lower fat versions of all cheese/ milk ingredients can be substituted to cut down on calories (and a little on taste).
