1 lb dried green split peas
4 quarts water
1 lb lean salt pork
1 C chopped onion
1 C chopped celery
1 C chopped carrots
½ tsp ground thyme
2 cooked potatoes
Salt and pepper
2 small, cooked sausages, sliced thin (optional)

Directions:
Directions:
Combine peas, water, pork, and onion in large pot. Simmer for two hours.
Remove the pork and cut off excess fat, then return pork to the pot, adding celery, carrots, and thyme. Simmer 30 minutes.
Mash or rice cooked potatoes and add.
Add salt and pepper to taste.
Serve garnished with sliced sausage (optional).
