1 Tbsp red wine vinegar
2 tsp brown sugar
¼ tsp salt
2 Tbsp olive oil
1 6 oz bag fresh baby spinach
1 C grated carrots (about two carrots)
½ C dried cranberries (optional)

Directions:
Directions:
Whisk together vinegar, sugar, and salt in a large bowl. Slowly whisk in olive oil and add salt and pepper to taste.

Add spinach, carrots, and cranberries (if using), and then gently toss to coat.
