1/2 cup uncooked bulger
1/2 cup boiling water
1 1/2 cups diced plum tomatoes
3/4 cup shredded cooked chicken breast
3/4 cup minced flat-leaf parsley
1/2 cup red bell pepper, finely chopped
1/2 cucumber, diced
1/4 cup fresh mint
1 1/2 tbsp fresh lemon juice
1 tbsp extra-virgin olive oil
1/2 tsp salt
1/4 tsp fresh ground black pepper

Directions:
Directions:
Combine bulgur and 1/2 cup boiling water in a large bowl. Cover and let stand for 15 minutes, or until tender. Drain well then return to bowl to cool.
Add remained of ingredients and toss to combine.
