2 cup all-purpose flour
3/4 cup quick-cooking rolled oats
3 tbsp. flaxseed
1 tsp baking soda
1/2 tsp salt
1 1/4 cups nonfat buttermilk
2 egg whites
1/4 cup honey
1/3 cup applesauce
3/4 cup cranberries
Nonstick cooking spray

Directions:
Directions:
Preheat oven to 350º
Mix together flour, oats, flaxseed, baking soda, and salt.
In a separate bowl, combine buttermilk, egg whites, honey, and applesauce.
Stir flour mixture into buttermilk mixture, then fold in the cranberries.
Lightly coat a muffin tin with cooking spray, then spoon in batter.
Bake for 20 minutes.
