2 cups lentils, rinsed
2 cups hot water
1 cup fat-free chicken or vegetable broth
4 carrots, finely chopped
1 large onion, finely chopped
1 green bell pepper, finely chopped
1-15 oz can Italian-styled diced tomatoes
2 garlic cloves, chopped
1 bay leaf
3/4 tsp salt
3/4 tsp dried marjoram
1/4 tsp ground black pepper
1 1/2 cups shredded reduced-fat sharp Cheddar cheese

Directions:
Directions:
Preheat oven to 375º
In a large bowl, mix together the lentils, water, broth, vegetables, spices, and 3/4 cup of the cheese. Pour into a 13"x9" baking dish.
Cover tightly with foil and bake for one hour, or until lentils are tender.
Removed and discard the bay leaf. Spring with remaining 3/4 cup of cheese.
Return to oven and bake an additional 10 minutes, or until bubbling and golden.
