3 C of bread flour, or another high gluten flour
1/4 tsp instant yeast
2 tsp salt
1 5/8 cups warm water (more or less depending on how humid it is)

Mix dry ingredients, add water until dry ingredients are all moistened, put in a Tupperware in the fridge with holes poked in the top, and wait at least 12 hours min, preferably 18. You can add olive oil, garlic, any herbs you want, any cheese you want, sub in 1 cup of wheat flour, add cinnamon and honey, make it your own!

Next day (or whenever you are ready to use it--I keep it mixed in my fridge pretty much on hand at all times):

Take dough out at least 2 hours before you'll bake, and roll it into the shape you want, cover with towel and let rise. Make sure to dust everything the dough will touch with lots of flour.

Heat oven to 450º F for at least 30 min, and heat the pan you will cook the bread on in the oven. Before you pop it in the over make a cross or several slashes on the top with a very sharp knife to make sure it doesn't bubble in the oven. Bake at 450º F for about 30-50 min, depending on your over, the size of the loaf, and how golden brown you like it. Sometimes I take the loaf out after 30, and put it back in the oven just on the rack. Also, when you put the loaf in the oven, put a pan with 1 cup of water on the rack just beneath the loaf to create steam!
