Ingredients: 1 huge skillet (preferably with a cover of some sort) 1 moderately reliable oven 1 large,covered baking dish 1 ambitious cook with at least one able assistant (resumes optional) 1 large can kraut ( I like Silver Floss) ½ lb bacon 1 cup brown sugar 1 medium onion 1 large shredded carrot 1 peeled, shredded apple 1 lb. kielbasa (That’s Polish sausage to the uninitiated)

Directions:In a large skillet (Big enough to hold all the kraut) cook bacon til crispy. Use about ½ pound per large can of kraut. Set bacon aside and keep a portion of the bacon fat (about 1/4 cup per large can of kraut). Dice one medium onion per large can of kraut and saute in bacon fat on medium heat until transparent to slightly brown. Add kraut to skillet with onion and bacon fat. Do not drain off liquid from kraut unless extremely soggy.
Stir the following ingredients into the mixture as you allow the evolving masterpiece to cook on medium heat. Add one cup of brown sugar per can of kraut. This can be adjusted to taste. Start with one loosely packed cup per can. Carrots and apples will contribute to sweetness. Add one shredded carrot and one peeled, shredded apple per can of kraut. Crumble bacon and add to mixture. Use about one pound of kielbasa per can of kraut. Cut into bite size pieces and add to mixture. If skillet is not big enough, you can add kielbasa to mixture as you get ready to transfer to oven.
Continue to cook on stove until oven is ready at 350º F degrees. This is why you leave the juice on the kraut. (Don’t let it cook dry). Transfer steaming mass to covered baking dish and cook at 350º F until entire house reeks of sauerkraut (about 1 hour)
Raise oven temp to 425º F and cook until brown glaze appears on top (about ½ hour). Note that glaze may also be seen in eyes of intended victims at this point.
Cooking times can be adjusted according to the oven. It’s actually ready to eat after about ½ hour in the oven. The extra time gives you a better blend of flavors and the high temp finish gives you a nice glaze on top in order to impress your friends.
