3-1/2 lbs. Chicken
12 oz. sliced Mushrooms
2 Tbsp. Olive Oil
1 large Green Pepper, Sliced
¾ Cup Chopped Onion
1 Can Stewed Italian Tomatoes
1/3 Cup White Wine
Cooked Brown Rice

Combine: 2 Tbsp. Flour, 1 tsp. Salt, 1 tsp. Oregano, ½ tsp. Pepper

Preheat oven to 400º F.

Cut vegetables & set aside. Cut chicken into bite size pieces. Heat oil in large roasting pan in the oven for 2 minutes. ( I use a large, deep cast iron skillet). Place cut up chicken in hot roasting pan & cover with flour mixture above. Roast in oven for 20 minutes. Add mushrooms, pepper & onions. Roast for 15 minutes. Don’t forget to start rice! Add tomatoes with liquid and wine – stir. Roast for 10 minutes. Serve over rice.
