2 lbs. Italian turkey sausage
2 c. chopped celery
2 c. chopped onion
2 cloves minced garlic
2 T. olive oil
10 c. beef stock
1/2 c. barley
1 c. brown rice
1 c. lentils
1 (10 oz.) package frozen spinach
1 (28 oz.) can crushed tomatoes
1 tsp. oregano
salt and pepper to taste

Directions:
Directions:
Remove casing from sausage and chop into bite sized pieces - brown sausage and drain.
In a large pot saute celery, onion and garlic in olive oil.
Add stock, barley, sausage, rice and lentils. Cover and bring to a boil. Lower heat and simmer for about 1 hour until barley, rice and lentils are cooked.
Add defrosted spinach, crushed tomatoes and spices.
