1 15oz can black beans, drained and rinsed well
1 cup fresh, frozen or canned corn, drained
1 red pepper, diced
1/2 red onion, minced
1/2 bunch green onion, sliced thin
2 T cider or red wine vinegar
1/4 cup olive oil
salt and pepper to taste

Optional: 1 can Ro-Tel Original Diced Tomatoes & Green Chili's or Jalapenos, drained.

Stir all ingredients together and season to taste. Refrigerate until ready to use.
