2 boneless, skinless chicken breasts, cut into pieces
1 potato, peeled and cut into pieces
1 onion, diced
1 stalk of celery, diced
1 carrot, peeled and cut into pieces
1 tomatoe, chopped
Salt and Pepper to Taste
Extra Virgin Olive Oil

Directions:
1. Sauté the chicken pieces in a little extra virgin olive oil in a medium sized pot
2. Add the remaining ingredients and about a quart of water – enough to cover the ingredients
3. Simmer for about an hour, keeping an eye on the level of the broth. Add more water as needed.
4. When all the vegetables are tender, let the liquid reduce as much as you like
5. Adjust the seasonings and enjoy!
