1 clove garlic, peeled
1/4 c. fresh parsley
2 slices whole wheat bread
1/4 c. grated Parmesan cheese
2 T. olive oil
1/4 tsp. salt
Freshly ground black pepper
1-1/2 lb. skinless salmon fillets
4 tsp. Dijon mustard

Heat oven to 400º F. Lightly coat baking dish with nonstick spray.
In a food processor, mince the garlic clove and then add the parsley and pulse until combined, about 15 seconds. Add the bread, Parmesan cheese, olive oil, salt, and a few grinds of black pepper. Pulse until well combined.
Arrange the salmon in a baking dish. Spread with mustard and pat the crumbs on top of each one.
Bake about 20 minutes, or until browned and cooked through.

This crust can also be used on flounder, boneless chicken breasts, and pork. Cook flounder 15 minutes, chicken 25 minutes, and pork 30 minutes.
