2 qt. water
1 c. whole white beans (Great Northern)
2 potatoes, peeled & diced
1 lb. fresh green beans
1/4 c. dried basil
5 cloves garlic, minced
1/4 c. vegetable oil
2 medium onions, sliced
2 1-lb. cans tomatoes, undrained
2 medium zucchini, sliced
2 tsp. salt (or to taste)
1 tsp. freshly ground black pepper
1/4 c. chopped parsley

Directions:
Directions:
In large kettle, boil water and add white beans. Boil 2 minutes, reduce heat, and simmer covered until tender (approximately 1-1/2 hour). Add potatoes, green beans, basil, and garlic. Simmer 15 minutes longer. Meanwhile, cook onions in oil until tender. Add to soup with tomatoes, zucchini, salt, pepper, and parsley. Simmer until zucchini is tender (15-20 minutes). Serves 8.
