5 ripe, sweet peaches, peeled and chopped
1/2 teaspoon of fresh ginger, minced
1/4 cup green onions, finely chopped (or use sweet onion such as Vidalia)
1 1/2 tablespoons sugar
1/2 teaspoon dry mustard
1 1/2 tablespoons fresh lime juice
Pinch of salt to taste
Pinch of white ground pepper
1 tablespoon fresh mint, finely chopped (or substitute with fresh cilantro)

Directions:
Directions:
1. Combine ginger and 1/4 of the peaches in a blender or food processor.
Process until smooth.
2. Combine remaining peaches, pureed peach mixture, onions and remaining ingredients except mint (or cilantro). Stir gently.
3. Cover and chill up to four hours.
4. Just before serving, stir in the fresh mint (or cilantro).
