1 medium zucchini, peeled
1 apple, peeled & cored
1 c nut butter (almond, peanut, etc.)
1/4 c raw honey
2 eggs
1/2 tsp baking powder
2 tsp cinnamon
1 Tbsp vanilla
1/4 tsp nutmeg
pinch of salt

Directions:

1. Preheat oven to 350°.

2. Shred zucchini in a food processor using shredding attachment or use a hand grater.

3. Put shredded zucchini in a clean kitchen towel and squeeze. Super important to squeeze out as much liquid as possible.

4. Shred apple in food processor or grater.

5. Once apple is shredded, run the knife through it for a rough chop.

6. Toss all ingredients in a bowl & mix thoroughly.

7. Spoon batter into lined cupcake pan with cupcake liners.

8. Bake for 25-30 minutes.
