1 c. chopped bell pepper
1/2 c. chopped jalapeno peppers (or more)
6 1/2 c. sugar
1 1/2 c. apple cider vinegar
1 bottle liquid pectin (2 Certo pkgs. equal 1 bottle)
1/4 to 1 tsp. green food coloring

Peppers can be chopped by hand or in a food processor (recommended). Combine peppers, sugar and vinegar in a large pot. Boil for 5 minutes at a hard boil. Add pectin and food coloring and boil 1 minute. Pour into hot, sterilized jars. Makes 4 pints or 8 half pints.

Make sure your pot is large enough so that when mixture boils and rises, it won’t spill over the top. Skim foam with a metal spoon. If you prefer a clear jelly, tie peppers in a piece of cheesecloth and remove before adding pectin. This recipe is courtesy of my grandmother, Marie Davis-Carrouth.
