crisp hearts of romaine
6 roma tomatoes, sliced
1 lb. of bocconcini (fresh, bite-size, mozzarella balls)
6-8 leaves of fresh basil
4 tbs. aged balsamic vinegar
1/2 c. first, cold-press olive oil
1 tbs. whole grain mustard
salt and fresh cracked pepper to taste

Directions:
Directions:
Combine first three ingredients and toss. Stack leaves of basil and roll up tightly. Cut very thin strips and separate (chiffonade). Add to salad and toss lightly. Add balsamic vinegar, olive oil and mustard in a separate bowl and whisk to combine. Pour over salad and toss lightly.
