3 eggs
2 c. sugar
1 c. canola oil
2 c. zucchini, shredded
2 tsp. vanilla
3 c. plain flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/2 c. pecans, chopped

Preheat oven to 325º F. Grease (bottoms only) two loaf pans. In large bowl, beat eggs until foamy. Stir in sugar, zucchini, oil and vanilla. In separate bowl, combine remaining ingredients. Mix well. Add dry ingredients to wet mixture and combine. Pour batter into prepared pans. Bake 50-60 minutes, until toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then turn out and allow to cool completely.
