1/2 C. fresh lemon juice
3 whole lemons
1 Tbs. Kosher salt
1/2 tsp. fresh ground pepper
fresh herbs for garnish

Preheat oven to 400 degrees.
Clean chicken inside and out with cold water. When clean, place chicken cavity side down in a colander and let dry for 2 to 5 minutes. Dry chicken with paper towels so most of the water is absorbed and it can really soak in the lemon juice. (That includes the cavity of the chicken.)
Transfer chicken to a roasting pan with a rack, with the breast side of the chicken down.
Pour the lemon juice all over the chicken, both inside and out. Then coat the entire chicken with salt and pepper.
Take two lemons and poke with a fork about 9 times. Make three separate areas on the lemon and poke a fork in each third about 3 times. Then place the two lemons inside the cavity of the chicken.
Place chicken in the oven and immediately turn the temperature down to 350 degrees. Let cook for 15 minutes and remove. Flip the chicken over so it is breast side up. And continue to roast for about an hour, or until the chicken is done cooking when a meat thermometer inside the chicken reaches 180 degrees. Reserve the juice from the bottom of the pan for later.
Remove from oven and let chicken rest about 10 minutes. Place chicken on a serving platter, garnish with lemon, herbs and the “marry me juice” from the pan and serve.
