12 medium tomatoes
1-1/2 Tbsp. Olive or vegetable oil
1 large onion, chopped (1 cup)
1 large green pepper, seeded and chopped
1 clove garlic, chopped
2 Tbsp. Chopped fresh parsley
1-1/2 tsp. salt
1 tsp. dried basil
1/2 tsp. dried oregano
1/8 tsp. pepper
Cornstarch and water paste (optional)

Peel tomatoes, quarter and seed. Heat oil in a heavy casserole or Dutch oven. Add onion, green pepper and garlic. Cook until onion is soft. Add tomatoes, parsley, salt, basil, oregano and pepper. Simmer until thick, about 1 hour. Cornstarch and water may be used to thicken sauce if necessary. Serve with pasta or meat loaf. (For meat sauce, allow 4 cups of sauce to one pound ground beef.) Leftover sauce can be stored in the freezer.
