2 cups all-purpose flour
3 tsp. baking powder
1/2tsp. salt
3/4cup sugar
1/4cup shortening
1 egg
1 tsp. vanilla
3/4cup milk
1-1/2cups fresh blueberries
2 Tbsp. sugar
2 tsp. grated lemon rind

Directions:

Measure flour onto square waxed paper. Add baking powder and salt; stir well to blend. Cream sugar, shortening, egg and vanilla thoroughly. Add milk and blend well. Add blended dry ingredients all at once, stirring only until all flour is moistened. Spread half the batter in bottom of greased 9-inch square pan. Spoon blueberries over top and sprinkle with 2 Tbsp. sugar and grated lemon rind. Spread remaining batter over top. Sprinkle with Topping. Bake at 375°F for 35-40 minutes. Serve warm or cold.

Topping:

Mix 1/2 cup flour with 1/4 cup brown sugar. Cut in 1/4 cup butter until mixture is crumbly.
