2 cups sifted all-purpose flour
1 Tbsp. granulated sugar
4 tsp. baking powder
1 tsp. salt
2 eggs, lightly beaten
1 1/2 to 2 cups milk
1/4 cup melted butter or oil

Directions:
Directions:
Combine all dry ingredients and sift into a mixing bowl. Combine eggs, 1 1/2 cups milk and butter. Stir into dry ingredients until larger lumps disappear. Add more milk if batter needs thinning. Pour batter on to a lightly greased griddle. The finished cakes should be about 6 inches in diameter. They are ready to turn when bubbles form and bread and the edges seem cooked. Turn and brown lightly on reverse side. If batter thickens on standing, thin with a little additional milk. Serve with melted butter and hot syrup or honey. Makes 18 pancakes.
