1 c. butter
2-8 oz. pkgs. cream cheese
1/2 c. milk
4-15 oz. cans of whole kernel corn, drained (can use thawed frozen)
1 tsp. cayenne pepper
OR
2 heaping Tbs. pickled jalapeno peppers, drained and minced

Topping:
2 c. shredded cheddar cheese

Directions:

Preheat oven to 375º F.

In a medium saucepan or medium heat, combine butter, cream cheese, and milk and stir until smooth. (If using cayenne pepper, stir it into this mixture.)

Pour corn (If using jalapenos, stir into corn to distribute evenly before pouring milk mixture over.) into a 9x13 inch baking dish. Pour milk mixture over corn and sprinkle with cheddar cheese. Bake for 35 minutes.
