6 med. size boneless skinless chicken breasts
1 box chicken broth
1 can cream of celery soup
1 can cream of chicken with herbs soup
1 red onion (chopped and caramelized in olive oil)
1 bunch green onions (chopped)
whatever vegetables you like (we use corn and green beans-at least)

2 c. self-rising flour
2 sticks butter, melted
2 c. buttermilk (1 Tbs. vinegar in 1 c. whole milk works the same)

Preheat oven to 350º F.

Boil chicken in water with salt and pepper, and tear into pieces. Bring to a boil the broth and soup. Add chicken pieces, onions, vegetables, and stir. Salt and pepper to taste.

Pour the chicken mixture in a baking dish. (I spray with a little Pam for easier clean up.) Pour/spread the biscuit batter over the top and bake for 40 minutes at 350º.
