2 c. leftover risotto
2 eggs
1/2 c. Italian bread crumbs
1/2 c. parmigiano reggiano
fresh basil, chopped
fresh mozzarella, cubed
1 c. Italian bread crumbs

Directions:
Directions:
Work with ingredients at room temperature. Mix together risotto, eggs, 1/2 c. bread crumbs, parmesan, and fresh basil. Roll into bite size balls and stuff with a piece of mozzarella. Roll each ball in bread crumbs and fry to a golden brown.

Arancini are very versatile. You can also stuff them with meat filling and peas. They are worth making extra risotto every time.
